A hearty breakfast option for you which is loaded with proteins. Try this different version of omelette with fresh spring onions!
HARA PYAAZ OMELETTE WRAP

Ingredients

4 spring onions, chopped
8 boiled eggs
8 eggs
8 tsps oil
1 tsp roasted cumin seeds
5-6 green chillies, chopped
1 tsp + a generous pinch of Tata Sampann Turmeric Powder
Salt to taste
2 pinches of red chilli powder
1 tsp garam masala powder
1 medium onion, chopped
1 medium tomato, chopped
4-5 tbsps chopped fresh coriander
Tomato ketchup to serve

Method

1. Heat 4 tsps oil in a shallow nonstick pan. Add roasted cumin seeds, half the green chillies, spring onions and sauté for a minute.
2. Add boiled eggs and toss well. Add 1 tsp Tata Sampann Turmeric Powder, salt, a pinch of red chilli powder, garam masala powder and mix well. Cook for 2-3 minutes. Take the pan off the heat and set aside.
3. Break eggs in a bowl. Add salt, remaining Tata Sampann Turmeric powder, remaining red chilli powder, chopped onion, chopped tomatoes, remaining green chillies and coriander and beat well.
4. To make one wrap, heat 1 tsp oil in a nonstick tawa. Spread a portion of the raw egg mixture evenly and cook for a minute. Place a generous portion of boiled egg mixture in the centre and fold the omelette to form a roll.
5. Transfer the roll on a serving plate and serve hot with Tomato ketchup.
