A delicious mix of rice and greens that is simple to make and easy to digest!HARI BHARI KHICHDIIngredients15-20 spinach leaves½ cup fresh coriander leaves¼ cup fresh mint leaves1 cup Basmati rice, soaked for 20 minutes and drained½ cup split skinless green gram, soaked for 20 minutes and drained1 tbsp ghee + for drizzling1 tsp cumin seeds¼ tsp asafoetida (hing)4-5 French beans, chopped¼ cup green peasSalt to taste¼ tsp turmeric powderChaas¾ cup yogurtA pinch of asafoetida (hing)¼ tsp roasted cumin powderBlack salt to taste1 tsp chopped fresh coriander leavesMethod1. Finely chop spinach leaves.2. Heat ghee in a pressure cooker, add cumin seeds and let them change colour. Add asafoetida and sauté well.3. Add soaked rice and soaked split skinless green gram and mix well. Add French beans and green peas and mix well.4. Add salt, turmeric powder and mix. Add 3 cups water, mix and cook under pressure till 2-3 whistles are given out.5. To make the paste, put coriander leaves in a blender jar, add mint leaves and ¼ cup water and blend to a fine paste.6. Open the cooker once the pressure has reduced completely; lightly mash the rice-lentil mixture.7. Add blended paste and 1 cup water, mix and cook for 1-2 minutes. Switch the heat off.8. To make the chaas, whisk yogurt in a jar, add asafoetida, roasted cumin powder, black salt, coriander leaves and 1½ cups water and whisk well. Pour into serving glasses.9. Transfer the hari bhari khichdi in a serving bowl, drizzle ghee on top and serve hot with chaas.
