Harvesting Now Pea Tendrils

The Chef's Garden's green and gold pea tendrils are #InSeasonNow and offer a mild raw pea/legume
flavor. The tendrils are succulent and
pleasantly crisp. Green pea tendrils have wide round
leaves branching the whole length of the stem,
with delicate curled filaments extending upward
and outward.

Gold tendrils sit atop translucent, leafless white
stems with sunny, narrow, pale yellow leaves
concentrated toward the tip. Fun fact: we
grow Gold pea tendrils uniquely, in a darkened
environment to inhibit photosynthesis which
would cause them to turn green.

Whether you choose green or gold, both
varieties add a textural dimension to salads, rich
color as a garnish, and both hold up nicely to
dressings, emulsions and vinaigrettes.
