Sambhar
For 3-4 servings
This is an extremely easy and healthy sambhar recipe.
1 Cup Toor dal
3 tomatoes
½ tsp Turmeric
Salt to taste
Veggies of your choice. I used onions, potato, zucchini, eggplant, and radish
Sambhar masala 3 tablespoon
1 Large lemon juice/Soaked tamarind paste
For tempering/Tadka
2 tsp oil
1 tsp Fenugreek seeds/ methi dana
1 tsp mustard
½ tsp Cumin
2 whole red chilies
Few curry leaves
Method:
Wash the door dal and put in Instant pot or pressure cooker.
Add 3 cups water, turmeric, salt, and whole tomatoes. Close the lid and cook for 8 mins on high pressure in Instant pot or up to 5 whistles in pressure cooker om medium flame.
Let steam release natural from instant pot or pressure released from cooker. Mash the whole tomatoes.
Add veggies and put again in Insta pot for 5 mins/2 whistles in pressure cooker.
Once, pressure is released, add 3 tablespoon sambhar powder and lemon/tamarind. Mix well and keep it aside.
For tempering, heat a tsp oil in a pan, fenugreek seeds and cook until brown. Add mustard, cumin, dry chilies, asofetida, and curry leaves. Cook for a min.
Add tadka to dal and veggie mixer. Sambhar is ready!
