A super interesting stir-fry with boiled eggs and your favourite vegetables to make your dinner time interesting.
HEALTHY EGG STIR FRY

Ingredients

4 hard boiled eggs, peeled
1 tsp sesame oil
4-5 garlic cloves, sliced
1 inch ginger, cut into thin strips
2-3 green chillies, diagonally sliced
1-2 spring onion bulb, diagonally sliced
4-5 mushrooms, sliced
3-4 baby corns, boiled and diagonally sliced
1 small red capsicum, cut into thick strips
1 medium carrot, boiled and cut into diagonals
3-4 French beans, boiled and diagonally sliced
2 tsps soy sauce
White pepper power to taste
Salt to taste
1-2 spring onion greens, diagonally sliced
2 tsps vinegar
Black sesame seeds for garnish
White sesame seeds for garnish

Method

1. Cut the eggs in quarters, separate the yolks and set aside.
2. Heat oil in a nonstick wok, add garlic, ginger, green chillies and spring onion, sauté for a minute.
3. Add mushrooms and sauté for 1-2 minutes. Add baby corn, red capsicum, carrot and beans, toss.
4. Add soy, white pepper powder and salt, mix well. Add egg whites, spring onion greens and toss.
5. Switch of the flame add vinegar, mix.
6. Serve hot garnished with black sesame seeds and white sesame seeds.
