HEALTHY EGG STIR FRYIngredients4 hard boiled eggs, peeled1 tsp sesame oil4-5 garlic cloves, sliced1 inch ginger, cut into thin strips2-3 green chillies, diagonally sliced1-2 spring onion bulb, diagonally sliced4-5 mushrooms, sliced3-4 baby corns, boiled and diagonally sliced1 small red capsicum, cut into thick strips1 medium carrot, boiled and cut into diagonals3-4 French beans, boiled and diagonally sliced2 tsps soy sauceWhite pepper power to tasteSalt to taste1-2 spring onion greens, diagonally sliced2 tsps vinegarBlack sesame seeds for garnishWhite sesame seeds for garnishMethod1. Cut the eggs in quarters, separate the yolks and set aside.2. Heat oil in a nonstick wok, add garlic, ginger, green chillies and spring onion, sauté for a minute.3. Add mushrooms and sauté for 1-2 minutes. Add baby corn, red capsicum, carrot and beans, toss.4. Add soy, white pepper powder and salt, mix well. Add egg whites, spring onion greens and toss.5. Switch of the flame add vinegar, mix.6.
