Shake until chicken breasts are evenly coated.Allow chicken to marinate for 30-60 minutes.Bake at 375°F until chicken reaches an internal temperature of 165°F.Store in the refrigerator for 3-4 days.Enjoy!Roasted Potatoes4-6 potatoes, cut into wedges2 tbsp olive oil2 cloves garlic, minced1 lemon, juiced and zested½ cup chicken/vegetable broth1 tbsp Greek seasoningsalt and pepperIn a large bowl, combine potatoes, olive oil, garlic, lemon, Greek seasoning, salt and pepper.Stir until potatoes are evenly coated.Pour into a baking dish.Add broth.Bake at 375°F for between 50-60 minutes or until potatoes are goldenbrown.Store in the refrigerator for 4-5 days.Enjoy!Mediterranean Chickpea Salad 1 large can chickpeas½ cup roasted rep peppers, chopped1 cup cherry tomatoes, halved1 cup cucumber, chopped½ red onion, chopped¼ cup kalamata olives, chopped¼ cup feta, crumbled1 tbsp olive oil1 tbsp white wine vinegar½ lemon juicedfresh parsleysalt and pepper,.In a large mixing bowl combine all ingredients.Stir well.Store in the refrigerator for up to five days.Enjoy!Tzatziki1 cup plain Greek yogurt1 cucumber, peeled, seeded and grated2 cloves garlic, minced½ lemon, juiced and zestedfresh dillsalt and pepperPeel, seed and grate the cucumber.
