Heng Kee Kway Chap: an Old-school Taste at Sims Drive Singapore Hawker Food

For more than three decades, a remarkable couple, Mr. Tan Beng Hin and his wife, have been crafting the beloved Singapore dish, Kway Chap, with passion and dedication. Their journey began in 1992, and today, their stall is synonymous with authentic flavours.

At the crisp hour of 3 A.M., Mr. and Mrs. Tan embark on their daily routine. It's a labour of love, meticulously preparing an extensive spread that captures the essence of this traditional fare. The display is a feast for the senses, featuring succulent braised pork trotter, tender pork belly, and a medley of offalsall marinated in a flavourful dark gravy.

Their menu also pays homage to the less common, old-school delicacies such as pig's tongue and fallopian tube, satisfying traditional taste profiles. Each slice is coated in a robust, savoury sauce, the perfect complement to the silky smooth Kway.

The highlight of the meal is undeniably the pork trotter, so soft and gelatinous it barely clings to the bone. A gentle nudge is all it takes to savour this exquisite delicacy.

For those who crave a fiery undertone to their meal, the homemade chili sauce elevates each mouthful with a spicy exuberance that tingles the palate.

The Tan's love for the craft is palpable in every bitean ode to heritage in Singapore.
