HERBY SPRING PEA: SIMPLY FRESH, GREEN, AND YUMMY!!

FULL RECIPE FOR HERBY SPRING PEA

Ingredients:

1 kg fresh green pea
1 large onion
1 bunch of spring onion
1 bunch of fresh dill
bunch of fresh parsley
bunch of fresh mint
2 tbsp calrose rice
1/3 cup of olive oil
1 cups of water
tbsp salt
tbsp sugar


Direction:

PREPARATION
Wash the spring peas, twice with running water
Then clean the peas
Separate the peas from the pods:
Press the stemless end of the pods to easily separate the lips, then push out the peas
Set aside some of the fresher pods
Peel the hard inner layer of each of these pods by breaking the pod inwards
Peel, wash, and dice the onion
Wash the spring onions and cut into small pieces
Wash and chop the dill and parsley
Wash the fresh mint, discard the hard stems and mince the leaves

COOKING
Set a medium-sized pot and pour 1/3 cup of olive oil
Add the onions and stir for 3 minutes on medium heat
Then, add the peas and the cleaned pods; thoroughly mix the ingredients
Add 1 cups of water, cover the pot with a lid bring to a boil
Once it boils, add 2 tbsp of rice and the spring onions. Give it a good stir, cover with a lid, set the lowest heat and cook for 30 minutes

SEASONING
Once the peas are cooked, turn off the stove
Then, add tbsp. salt, tbsp. sugar, mint, dill, and parsley; mix all the ingredients
Cover with a lid and rest for 5 minutes


SERVING
Spring pea is a perfect choice for hot summer days
It is a light dish that can be served cold and warm

Additional green herbs enhance its delightful aroma while its green colour and herby taste call for a fresh breath of spring

It is also a light dinner choice; better serve with a portion of plain rice pilav
