About Hida Wagyu

Hida Wagyu from Gifu Prefecture is one of the top classes of cattle bred through the district. With only A5 quality class strictly raised, Hida beef cattle are a breed of Japanese black cattle that have been raised in the Gifu for at least 14 months. The Wagyu tenderloin is well known for its tenderness and unique flavor, and the cut is perfect for chateaubriand, roasting whole, or portioning into steaks.

ARITA Porcelain(有田焼)
All plates used in this video are Arita Porcelain products from Ninomiya Crystal, one of Japan's prominent dish wear providers. Arita porcelain refers to porcelain made in Arita Town in the Kyushu region, and it is said to have been born in the 17th century, making it the oldest porcelain style in Japan. Arita porcelain is so famous for its gorgeous appearance and design and its ease of use daily. Arita porcelain has garnered much interest and respect in both Japan and overseas. Aoki Takayuki knife
The knife that Chef Michi used is Sakai Takayuki brand. Sakai Takayuki was established in 1946, and has since become one of the biggest manufacturers of Japanese knives. Their product comes from the origins of sword making in Sakai, Japan, the history of which stretches back 800 years.
