Everyone loves Chicken Cutlets. Let me show you how easily it can be made at home.Ingredients: 500 gms Boneless Chicken4 large Potatoes2 large Onions chopped5 finely chopped Green Chillies1 inch finely chopped GingerFew Curry leaves1/2 tsp Mustard1/2 tsp Fennel1/2 tsp Turmeric1 tsp Pepper powder1 tsp Garam masala1/2 cup chopped Coriander leaves2 cups fresh Bread crumbs2 EggsSalt to tasteOil for deep fryingMethod: Cook the Chicken with a pinch of salt. Cool, mince and keep aside. Boil, peel and mash potatoes and keep aside. In a pan, heat 4 tbsp Oil and crackle the mustard and fennel seeds. Then add chopped onions and curry leaves and saute for 2-3 minutes. Next, add finely chopped ginger and chillies and saute well. To this add the minced chicken, turmeric, garam masala, pepper powder and salt and mix well. Put in the mashed potatoes and coriander leaves and combine well. Take off heat and let it cool. Once cooled, mix well with hand and shape into cutlets. In a bowl whisk the eggs with a pinch of salt. Dip the cutlets in egg, and roll them in fresh bread crumbs. For added crunchiness, double crumb the cutlets. To do this, repeat the process by dipping them in egg and rolling them in bread crumbs once again. Deep fry in hot oil till cutlets turn brown.
