Ingredients:
½ cup Urad Dal
1.5 tbsp Rice Flour
Few Pinches of Kesari Colour
½ cup Sugar
Water as Required
Saffron Strands
Few drops of Rose Essence
Ghee for Deep Frying

Method:
1. In a bowl, soak urad dal for 2 hours. Grind into a smooth paste as you would for idli batter.
2. Add colour and mix well. Keep aside.
3. In a kadhai, combine water and sugar. Cook syrup till 1/2 string consistency. Add essence and saffron strands. Ensure that the syrup is warm when you dip the jangri in it.
4. Simultaneously, heat ghee for frying. Once hot, reduce temperature.
5. Place portions of batter in piping bag and shape into jangiri in hot ghee. 
6. Fry till well cooked on both sides. Dip the jangiri in warm sugar syrup and remove onto a plate after 3-4 minutes. Follow the same process for the rest of the batter.
7. Store for few hours before serving for an even juicier Jangri. Alternatively, you may serve warm.
