HOMEMADE 'TAVUK DNER' RECIPE - Chicken Doner Kebab

In this episode, I'd like to share with you my version of 'Chicken Doner Kebab' recipe, one of the most popular fast food dishes. Dner literally means: 'rotating or turning roast', in Turkish. Homemade version is so easy to prepare, also tastes amazing. And there's nothing like having easy homemade fast food on hand. Hope you give it a try!

INGREDIENTS (2-3 servings)
5-6 pieces boneless- skin on chicken thighs
1 small onion, coarsely chopped
1/3 cup olive oil
2 real tablespoonful thick yogurt
1 real teaspoonful tomato paste
1 tsp red sweet paprika
1/2 tsp cumin and dried thyme
Salt & pepper

DIRECTIONS
For the marinade: Finely chop onion in a blender.
Using a cheese a cloth, squeeze out the extra liquid into a large bowl.
Combine the liquid with yogurt, tomato paste and olive oil.
Add 1/2 tsp cumin and thyme, 1 tsp sweet paprika.
Add a pinch of salt and pepper, mix well.
Rinse&drain the chicken thighs, and please make sure to wash your hands each time you touch raw meat.
Pat dry the thighs.
Place a large sheet of plastic wrap on the work surface.
Rub marinade onto both sides of the chicken thighs and place on plastic wrap.
Give them a baton cake shape.
Seal the plastic wrap and tie one end.
Wrap tightly in some more layers of plastic wrap, then tie the other end securely, pushing out any air.
Refrigerate for 24 hours, then transfer into the freezer.
When ready to use, remove from the freezer about 1 hour before serving time, let stand at room temp.
In the meantime you may prepare side dishes.
You may cook some pilaf.
You may buy lavash bread, and chop some lettuce, tomato, onion.
You may prepare a salad, and drizzle the dressing just before serving.
You can prepare some French fries/chips.
When the time is up, peel off the plastic wrap.
Using a sharp knife, slice thinly.
It should be still frozen but easy to slice.
Work in batches, so you don't crowd the pan.
In a large pan, heat a little olive oil and butter, over medium to medium high heat.
Add dner and cook until desired doneness, stirring occasionally.
My slices are not very thin, so takes about 7-8 minutes to cook.
When done, season to taste and sprinkle a tiny pinch of hot paprika.
Turn off the heat and transfer into a plate using a slotted spoon.
If using: make sure to dip lavash bread in the pan, before wrapping :)
Reheat the pan and repeat the same until all is used.
Arrange cooked TAVUK DONER in a serving plate or wrap in lavash bread, garnish as desired and serve with ayran.
