Today I'm packing vegetarian kid-friendly sushi using simple ingredients from my pantry and leftovers from last night. The lightly sweetened egg filling in this sushi also makes it a treat that my daughter enjoyed for breakfast (since I made 2 rolls this morning!). They were a hit!
