Honey Bran Buttermilk Muffin Recipe | Glen And Friends Cooking

Wake up to these Honey Bran Buttermilk Muffins and start your day off right! This easy breakfast muffin recipe is great anytime.
Ingredients:
1 cup (250 mL) bran
1 cup (250 mL) buttermilk
⅓ cup (75 mL) butter
½ cup (125 mL) brown sugar
2 Tbsp (30 mL) honey
1 egg
1 cup (250 mL) all purpose flour
2 tsp (10 mL) baking powder
½ tsp (2 mL) baking soda
1 tsp (5 mL) salt

Method:
Pre-heat oven to 375ºF
Soak bran in buttermilk.
Cream together butter and sugar, then beat in honey and egg.
Mix in the bran that's been soaking in the buttermilk.
Mix together the dry ingredients: flour, baking soda, baking powder, and salt.
Add the dry ingredients to the wet - and mix just until moist.
Don't over mix!

Bake for 15 - 20 minutes.
Makes 6 jumbo muffins.
