(2.2 pounds) green tomatoes2 small onions3 long green peppers (sweet)1 heaping tablespoon tomato paste2 leveled tablespoon coarse bulgur (optional)1 cup hot water (add 1/2 cup water, if NOT using bulgur)2 tbsp butter, 1 tbsp olive oilSalt & pepperOne handful chopped fresh parsleyDIRECTIONS Peel the onions, cut into cubes.Rinse the peppers, cut off the stems.Taste and check them , to make sure they're sweet.Then slice finely.Rinse the tomatoes, cut off the stems.Peel and discard bad parts of the skin, if there are any.Then cut into cubes, about the size of a green plum.Heat 2 tbsp butter and 1 tbsp olive oil in a large pan, over medium low heat.Add the onions, sprinkle a pinch of salt and pepper.Sautee for about 5-6 minutes, or until tender, stirring occasionally.Add the peppers, sautee for 2-3 minutes, stirring occasionally.Add the tomato paste and 3-4 tbsp hot water.Cook for 1 minute, stirring constantly.Add the tomatoes carefully.Cover, leaving the lid slightly ajar.Cook for 5 minutes, stirring occasionally.If using bulgur, add 1 cup hot water, otherwise 1/2 cup water should be enough.Sprinkle 1 tsp or to taste salt, and a pinch of black pepper, mix.If desired, add 2 leveled tablespoon bulgur, mix.But it is totally optional.Bring to a boil over medium heat, then transfer the pan to the smallest burner of your gas stove.Cover and cook for about 20 minutes or until tender, over medium low heat.Check for doneness.And season to taste.Turn off the heat, let rest for 15 minutes, leaving the lid slightly ajar.Add chopped parsley, mix.Transfer to a serving plate and serve hot with some fresh bread or pilaf on the side.It tastes so fresh and light!If you enjoyed the video please subscribe to my channel, leave a like and share your comments below for more recipes.
