HOW TO COOK TURKISH TARHANA SOUP - Traditional Soup

In this episode, I'd like to give you some ideas for how you can cook Tarhana, a perfect dish on a winter's day. INGREDIENTS
4 real tablespoonful Tarhana
5 cups water
1 tbsp clarified butter (or butter)
2 tbsp olive oil
1 clove of garlic (optional)
1 tsp dried mint flakes
1 tsp red sweet paprika
Salt to taste

Make sure you have some hot water, before you begin

DIRECTIONS

Combine the Tarhana and a cup of cold water in a bowl, mix well and set aside.
Leave for about 10 minutes, or until it gets thoroughly dissolved, depending on the size of the Tarhana pieces.
Heat the olive oil in a saucepan over medium heat.
Add 1 tsp dried mint and cook for 1 minutes, while stirring.
You can also add a small amount of ground beef or tomato paste, if desired.
Stir in 4 cups of water. Tarhana is usually cooked with water, but using chicken stock puts it on another level!
Stir in Tarhana.
Add one clove of garlic.
You may also add cooked beans, chickpeas or black beans if desired.
And bring to a boil, over medium heat, stirring constantly.
It took me about 9 minutes.
When it comes to a boil, reduce heat to medium-low and let simmer for 2-3 minutes or until thickened.
Meanwhile, melt clarified butter (or butter) in another pan.
Add 1 tsp red sweet paprika and cook for 1 minute, while stirring.
You can also use hot paprika or cayenne to taste, if desired.
Check the soup for seasoning, add salt to taste, depending on how salty Tarhana is.
Stir in the melted butter and paprika mixture.
Thin soup with some hot water if it's too thick.
Traditionally Tarhana soup is served with peeled, quartered fresh onions and bread. Or garnish it with some finely chopped onions.
