I like to cook without recipes the first time I do something - but I can't leave you all hanging if you're expecting a recipe, so here's one I found that looks great (and very close to what I did).

Macoun apples are popular in Vermont and upstate New York, but they can be harder to find out of season - I'm pretty sure they're not grown in Chile or wherever else apples come from the rest of the year. They're a staple at Middlebury College in September/October, and a perfect "grab and go" apple because they are not too big and taste great eaten fresh.
