Made using only 3 ingredients- banana, jaggery and lots of love; this recipe is a popular south Indian dessert recipe. The spongy texture makes everyone fall in love with it. Top it with cashew or almond to make it look prettier. BANANA HALWAIngredients8 ripe yellow bananas1 cup chopped jaggery cup chopped palm jaggery cup + 2 tbsps melted ghee + to grease tsp green cardamom powder cup roughly chopped cashew nuts5-6 cashew nuts, vertically halved and deep friedMethod1. To make the syrup, heat jaggery and palm jaggery in a pan. Add cup water, mix and cook till the jaggery melts. Take the pan off the heat.2. Peel the bananas and break into small pieces and add into a mixer jar. Grind to a fine puree.3. Heat a non-stick pan. Add the banana puree and continuously stir and cook for 5-6 minutes or till the colour changes. Add cup ghee and continue to mix and cook till the mixture turns golden brown. Add the syrup and mix till well combined. 4. Add the green cardamom powder and continuously stir and cook for 6-8 minutes. 5. Add cashew nuts and remaining ghee and mix well. Continue to stir and cook for 2-3 minutes or till the mixture leaves the sides of the pan.6. Grease a square glass mould with some ghee.7. Transfer the banana mixture into the greased mould and spread it evenly. Arrange some fried cashew nut halves. Keep aside for 2-3 hours or till set.8. Cut into squares and arrange them on a serving plate.
