Chimichurri sauce is a delicious green condiment originating from Argentina. Consisting of herbs, like parsley and oregano and mixed with garlic and red wine vinegar, "Chimichurri" is the perfect marriage on steaks and fish.

In this recipe we used:
about 2 cups of flat leaf parsley
1 cup of spanish olive oil
juice of two limes (or you can use red wine vinegar)
5 cloves of garlic
1 shallot
about 2 tbsp thyme, oregano, and basil
(try using cilantro, too!)
Salt & pepper to taste

Give the herbs a good chop and add to a mixing bowl.

finely chop your garlic and shallot.

stir and drizzle in your oil and lime juice and season to taste.

*for an extra kick, add a roasted jalapeo or serrano pepper.

Add Chimichurri to your favorite steak, like Rib Eye!
