How to make a Colorful, Healthy, Black Bean Salad with Kids

CwK black bean salad
(serves 4-6)

2 15oz. cans black beans
1 tsp dried oregano
1 tsp smoked paprika
1 tsp cumin seeds
1/2 mango, cut into pieces
3 radish, cut into pieces
1/2 shallot, minced
1 acocado, cut into pieces
1 carrot, cut into small pieces
EVOO, glug
1 lime, juice and zest
apple cider vinegar, Tbls
handful of cilantro, whole leaves or chopped
s&p to taste


Rinse beans, add to bowl. Add all chopped ingredients, herbs and seasoning. Add the avocado last, gingerly tossing but do not mix too much otherwise it may become mushy.
