How to make Greek Rizogalo (rice pudding)

Ingredients:
1 cup Arborio rice (risotto rice)
3 1/2 cups water
2 cups of milk
3 tablespoons of cornstarch
1 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract

Instructions:
1. In a small pot, add the water and bring it to a boil.
2. Once boiling, add the Arborio rice, cooking until most of the water is dissolved.
3. Next, lower the heat to low and add only 1 cup of the milk to the rice.
4. For the rest of the milk, add the cornstarch in it and stir until completely dissolved.
5. Add the milk/cornstarch mixture back into the pot and then add the sugar, cinnamon and vanilla extract.
6. After everything is in the pot, never stop mixing! You don't want anything to stick or burn.
7. Once the mixture starts boiling and becomes thick, turn it off.
8. Pour into individual bowls or glasses and cool in the fridge. Serve cold.
