We're creating memories with Kyler's friend, Soleil and we're making homemade corn tortillas, bbq jackfruit (packaged) and topping it with a cabbage, cilantro, green apple slaw.It was the first time using jackfruit, and we will do an episode cutting into the actual fruit, but for this one, we wanted to focus on the tortillas.We used Bob's Red Mill organic Masa Harina. 2 cups organic masa harina corn flour1/2 tsp. sea salt1 1/2-2 cups hot watermix salt into the masa harina corn flour. Slowly pour the water into the daugh. The dough should be firm and springy. Let rest for about an hour, covered with a damp towel. When ready to use, roll dough into golfball size balls and flatten with tortilla press. Heat in skillet on medium high heat about one minute per side.Any brand of bbq jackfruit, 1/2 can organic garbanzo beansheat up according to package, adding garbanzo beans to mix.For the slaw we used:1/4 of a red cabbage, thinly sliced1/2 a red onion, thinly slicedbunch cilantro, choppedsplash of extra virgin olive oil1 green apple, cut into matchsticks sizelime juice, squeezedsimply organic cinnamon, pinchsimply organic oregano, pinchsalt & pepper, to tasteadd all ingredients in a bowl and lightly toss with lime juice and a splash of olive oil.build your taco.
