What do you do when you have lots of Kimchi left in the fridge? Simple stir it up in a hot pan with rice and left-over vegetables. That in essence is Kimchi Fried Rice ! This simple but delicious dish is one of those childhood comfort foods that I remember quite fondly. I remember squeezing out ketchup, trying to spell out my name on top of the fried rice. Then you get your spoon and mix in with the egg, rice and kimchi. You may have had fried rice, but the kimchi gives it the umami flavor! Here is an easy recipe for Korean fried rice, including a nice sunny-side egg over the top. Dont forget the ketchup!
