How to Make Southern Thai Sour Curry Paste (Prik Gaeng Som Tai) Thai Girl in the Kitchen

In this video we're going to see how to make Thai sour curry paste in the southern version.
What's the difference between the southern Thai vs. the other regions of Thailand's versions?

Well the tastes are similar but the southern version tends to have a stronger, more spicy taste while Gaeng Som from the other parts of Thailand usually taste milder.

The ingredients of southern Gaeng Som, we mainly use Thai dried chili and fresh bird eyes chili (some households go straight up fresh chili) while the other regions will mainly use dried chili peppers and add a little bit of Thai chili for the spice.

Gaeng Som from other regions also include finger roots in the ingredients while the Southern version, we leave the finger roots out and add turmeric in the recipe which makes the curry yellow.

This makes Thais from other regions calling 'Gaeng Som' from the south 'Gaeng Lueng' instead.
Since the word 'Som' means orange and can also mean sour in some local Thai dialect. While 'Lueng' means yellow.

After all, each region, areas and even households in the same regions may have a slightly different ratio and recipe.
This one in the video is my family recipe that I grew up eating.
You can adjust here and there to fit your preference/s since there will be no absolute 'right' or 'wrong'.
Only you 'love it' or 'don't love it'.

Recipe: How to make Thai sour curry paste | Thai Girl in the Kitchen

Ingredients :
- 36g. Garlic (7-8 cloves)
- 50g. Shallots
- 20g. Turmeric
- 2 tsp. Salt
- 10g. Fresh bird eyes chili
- 8-10g. Dried chili
- 2 tbsp. Shrimp paste


The amount of every ingredient is totally okay to be a little more or less.
Thai households rarely measure anyway. We just estimate by the eyes for example, garlic and shallots are about the same amount eye-judging wise etc.

Homemade version of any curry paste gives so much better and fresh flavors.
Might not be the most convenient but all the effort will be totally worth it!
