Khao man, or Khao Mun Gai is the Thai version of the classic Hainanese chicken rice from southern China.

Recipe: Khao Mun Gai / Chicken Rice Sauce (serves 6-8)

180ml (6 fl oz) Soy Bean Sauce
6-7 tbsp of finely chopped ginger
1.5 tbsp of finely chopped fresh green and red chilies
1.5 tbsp of finely chopped garlic
4 tbsp of rice vinegar
5 tbsp of sugar
2 tbsp of Sweet soy sauce
Juice from 1 lime

Method: Clean and peel the Ginger and Garlic and run them individually in the food processor. Set aside.
Deseed the fresh chilies and run them in the food processor then add all the ingredients together in the food processor, mix and youre ready to serve the sauce.
