Eggplant is closely related to the tomato and the potato. When we cook eggplant, we love grilling it or in this case, we sear it on the griddle. Great paired with any lamb dish. Here is how we made ours.1 large eggplant1 oz. feta cheese, crumbled1 teaspoon thyme (add rosemary too)1/4 cup extra virgin olive oil1 clove garlic, crushedsalt and pepper to tasteSlice the eggplant about 1/2 inch thick. Place on a baking sheet and salt both sides. Cover with another baking sheet and weigh it down for approximately 20 minutes. This process will extract all the moisture out of the eggplant. Now wipe away the moisture on both sides with a paper towels. you'll go through quite a bit. Lay them down on a kitchen towel or more paper towels and let dry completely.In a small boll crush or finely chop the garlic. chop the thyme and rosemary if using and add to the bowl. Add the olive oil. Season to taste.For a little spice, red pepper flakes should be added to this stage. Stir then brush onto both sides of eggplant. Sear about 3-4 minutes per side.
