In this episode, I'd like to show you, how to make Turkish Chai (tea) by using a double tea kettle. In Turkey, to offer tea is a sign of
friendship and hospitality and there is no bad place or time for a cup of tea. It is also a Turkish breakfast companion. Some says, having a cup of 'Turkish tea' is helping you to get some much needed rest, after a long tiring day.


INGREDIENTS:

Turkish Tea (loose black tea )
Sugar Cubes
Lemon Wedges (optional)

Tea Strainer
Turkish Chai Bardagi - (small tulip-shaped tea glasses)
Turkish Caydanlik (double tea kettle)



DIRECTIONS:

Unless you have a teapot strainer, you might need a tea strainer.
Put 3 (real) tablespoonfull tea to the 'Demlik' (the top kettle)
Rinsing is a personal choice, so rinse your tea if desired,
we never do.
You can also make tea with 3 large tea bags or 6 regular size
tea bags.
Fill the bottom larger kettle with water, place the 'Demlik' on top and bring to a boil on medium high heat.
Once boiling, carefully fill the 'Demlik' halfway full of hot water.
A big 'Demlik' will make 6 small glasses of very dark or 24 small glasses of very light tea.
Then refill the bottom with water and place the 'Demlik' back on top, so the tea leaves steep over the steam.
Once boiling, reduce the heat to the lowest possible setting.
In 10-15 minutes, the tea should be ready.
Carefully leave the 'Demlik' slightly ajar, to prevent hot water leaking out, from the bottom kettle.
Totally optional but, you can warm up the glasses by pouring some
hot water into a 'Chai Bardagi' then by pouring the water from one 'Bardak' to another.
Using a tea strainer, fill 1/2 of the 'Chai Bardagi' with tea for a 'Cok Koyu' (very dark) taste.
Or, 1/3 for a 'Koyu Chai' (dark tea), 1/4 'Acik Chai' (light tea) and 1/8 'Cok Acik' (very light).
'Cok Acik' tea is only for 'grannies' and me :)
Whatever your heart desires.
Then top up with the boiled water from the bottom kettle.
DON'T add sugar when serving Turkish tea!
Instead, serve with sugar cubes, a teaspoon and lemon wedges if desired.
It is very common to make a tinkling from the spoon, while stirring to dissolve the sugar :)
Some likes to drink tea in a 'Buyuk Bardak'. (glass coffee mug)
And a lovely way of saying: 'No more tea, please', is to place your
teaspoon on top of the glass.
You can refill the bottom kettle with water if needed, as you'll be
serving a few rounds.

In Turkey, no meal is complete without a glass or two of tea to finish it off.
You can serve Turkish tea with cookies, cakes, boreks, coreks, Turkish simit. Or just prepare to feel much better, sit down for a cup of tea with a friend or family member, and sip slowly on tea while discussing about your life and enjoying each other's company :)
