#Cooking Cheesy Corn & Spinach Samosa
For vegan option, add shredded or crumbled tofu with corn and spinach. This is a super easy recipe for cheese samosa. I was craving for them for a while and decided to whip them up very quickly by using ready semi-cooked tortillas wraps. Very friendly recipe as the stuffing can be prepared ahead of time and can be refrigerated. In fact, I like to make the filling a day ahead for batter result.

Ingredients
1 tbsp Oil
2 tbsp Garlic, minced
1 cup Onion
Salt & Pepper to taste
Red Pepper Flakes to taste
1 cup Corn
6 cups Spinach
1 cup Colby cheese or your choice of cheese
8 oz Cream Cheese
For the Glue Paste: 2 tbsp Flour + Water as needed
6 Tortillas or Rotis or Wraps
1 cup oil for frying
