DAHI BHALLAIngredients1 cup split skinless black gram (dhuli urad dal)Crushed black peppercorns to tasteSalt to tasteA pinch of red chilli powder8-10 raisins, chopped1 tbsp finely chopped ginger1 tbsp chopped cashew nuts¼ tsp asafoetida (hing)Sweetened yogurt2 cups whisked yogurt1/3 cup powdered sugar¼ tsp roasted cumin powder¼ tsp black salt¼ tsp salt¼ tsp chaat masalaToppingDate and tamarind chutney for drizzlingGreen chutney for drizzlingRed chilli powder for sprinklingRoasted cumin powder for sprinklingBlack salt for sprinklingChaat masala for sprinklingFresh pomegranate pearls for garnishMethod1. Take split skinless black gram in a large bowl, add sufficient water and wash it for 2-3 times. Drain the water and add sufficient water. Set aside to soak for 3-4 hours. 2. Drain the gram and add it into a blender jar. Blend well, add 1 cup water gradually and continue to blend a smooth and thick paste is formed. 3. Transfer the blended mixture into a large bowl and whip with your hands to incorporate air to make the mixture lighter.4. Add crushed black peppercorns, salt, red chilli powder, raisins, ginger, and cashew nuts and mix well.5. Heat sufficient oil in a kadai6. To make the bhallas, dip your fingers in water, take a small portion of the mixture and gently slide in a few portions at a time in the hot oil. Deep fry till golden brown and crisp. Drain on an absorbent paper.7. Take sufficient warm water in a large bowl. Add asafeotida and mix well. Add the fried bhallas into it and set aside for 5-10 minutes.8. To make the sweetened yogurt, take yogurt in another large bowl. Add powdered sugar, roasted cumin powder, black salt, salt, and chaat masala and mix well. 9. Squeeze the excess water from each bhalla and transfer it into the yogurt mixture. Mix and refrigerate this till chilled completely. 10. To serve, transfer a portion of the dahi bhalle into serving bowls. Drizzle date and tamarind chutney, green chutney, sprinkle red chilli powder, roasted cumin powder, black salt, chaat masala and garnish with pomegranate pearls. Serve immediately.
