Learn how to make Fettuccine Carbonara, a delicious pasta recipe by Tarika Singh.

Fettuccine Carbonara is an Italian pasta dish from Lazio, and more specifically Rome. Food Blogger Tarika Singh adds a small twist to this delectable recipe based on eggs, cheese, bacon and pepper.

Ingredients:

2 ltrs. water
200 gms. fettuccine
20 gms. salt
1/2 tbsp. olive oil
75 grams bacon
2 eggs + 1 egg yolk
50 grams Parmesan cheese, grated plus more for serving
pepper to taste
small pinch of red chilli flakes (optional)

Method:

To make fettuccine:
- In a vessel, bring the water to boil.
- Add the salt and fettuccine in the boiling water and let it boil till it's cooked al dente.

To make bacon:
- Take a pan and add the olive oil.
- Add the bacon (cut into small pieces) to the olive oil and cook them till they turn slightly brown in colour.

To make the sauce:
- In a bowl, crack open 2 whole eggs.
- Add only the yolk from the third egg and whisk them well.
- Add the Parmesan cheese to the egg yolk mixture and whisk it.
- Add very little black pepper and a tiny pinch of red chilli flakes to the above ingredients.

To make carbonara:
- Once the pasta is ready, get all of the pasta out on a strainer and strain the hot water.
- Add the hot pasta to the sauce and carefully mix them together.
- Add the bacon to the pasta.
- Serve the carbonara with some pepper on the top and some grated Parmesan cheese.
