Chicken Teriyaki Fried Rice (Chicken Rice)
Ingredients
2 chicken breast, cut into one bite size
4 Tablespoons teriyaki sauce
4 Tablespoons peanut oil
4 cups of basic fried rice
4 green onions, chopped
2 teaspoon sesame seed
2 teaspoon sesame oil
Katsuobushi(dried bonito)
6 shiso leaves, optional
Mayonnaise, optional

Direction
1. Marinade chicken in teriyaki sauce, set aside 30 minutes.
2. Heat a wok over high heat, add oil and swirl to coat. Add the chicken and stir fry for 1 min until chicken looks nice brown. Add basic fried rice, stir for 30 seconds. Remove from heat. Serve immediately.
3. sprinkle with chopped green onion, shiso leaves, sesame seed and katsuobushi, drizzled with sesame oil and mayonnaise.


Beef Broccoli Fired Rice (Beef Fried Rice)
Ingredients
16 oz. Sirloin, chuck or your favorite part of beef, cut into one bite size
4 Tablespoon oyster sauce or dark soy sauce
4 teaspoon sriracha sauce
4 teaspoon shao xing wine
4 Tablespoon peanut oil
4 cups of basic fried rice
1/2 cup chopped broccoli
Chive, chopped

Direction
1. Marinade beef in oyster sauce or dark soy sauce,sriracha sauce and shao xing wine, set aside 30 minutes.
2. Heat a wok over high heat, add oil and swirl to coat. Add beef and stir fry for 45 second to 1 minute then add broccoli, stir fry for another 1 minute. Add the basic fried rice and stir thoroughly. Remove from heat. Serve immediately, with chopped chive.

Thai Shrimp and Pineapple Fried Rice (Shrimp Fried Rice)
Ingredients
20 jumbo shrimps
fresh zest and juice from 1 lime
4 teaspoons fish sauce
4 teaspoons sugar
2 Thai chilies, seeded
4 teaspoons chopped ginger
4 Tablespoons peanut oil
4 cups basic fried rice
1 cup chunk pineapple
4 teaspoons chopped peanuts
Cilantro, optional

Direction
1. Marinade shrimp with next 4 ingredients, through Thai chilies, and set aside 30 minutes.
2. Heat a wok over high heat, add oil and swirl to coat. Add the shrimp and stir fry for 45 second to 1 minute. When you don't see any liquid and shrimp cooked 3/4 way, add the basic fried rice. Stirring, then add pineapple.
3. Remove from the heat and continue to stir until all the ingredients mixed well. Serve immediately, with chopped peanuts, cilantro and one wedge of lime.


Indian Vegetable Fried Rice (Vegetable Fried Rice)
Ingredients
16 oz. paneer(Indian cheese) or extra firm tofu, cut into one bite size
1/4 cup yogurt
1 Tablespoon cayenne pepper
2 teaspoon chili powder
Salt and pepper for taste
1/4 teaspoon green cardamom seeds
1 Tablespoon mustard seeds
2 teaspoon cumin seeds
1 teaspoon coriander seeds
3 bay leaf
3" long cinnamon stick
1 1/2 teaspoon turmeric
4 cups of basic fried rice
1 cup sweet peas
Handful fresh mint, leaves picked, chopped

Directions
1. Marinade paneer or tofu in yogurt,cayenne pepper,chili powder,salt and pepper, set aside 30 minutes.
2. Heat a wok medium low heat then add oil. Add mustard seeds,cumin seeds,coriander seeds,bay leaf,cinnamon stick and turmeric. Toast the spices for 30 seconds, then add paneer or tofu and sweet peas. Continue to stir until sweet peas are cooked for a couple minutes.
3. Add the basic fried rice, stir until single grains of rice coated with the most beautiful yellow color. Remove from heat.
4. Serve immediately as desired, with chopped mint.
