Bibinbap Rice Bowl.. A Korean dish

Ingredients

• One cup cooked rice
• 1 egg
• 2 tsp sesame seeds, white and black

Vegetables

• One carrot julienned
• one cucumber julienned
• 6/8 mushrooms, shiitake ones are preferred. Soak them in water.
• Few Chinese pak choi
• 2 tsp garlic minced
• 1/2 tsp soy sauce
• 1/4 tsp sugar
• 4 tbs sesame oil

Bibimbap sauce

o 2 Tbs Gochujang paste
o 1 Tbs vinegar
o 1/2 tsp soy sauce
o 2 tsp powdered sugar
o One garlic clove, minced


Method

1. Mix all the sauce ingredients and keep aside.
2. Sauté the carrots lightly with oil and garlic. Keep aside.
3. Toss the pak choi with little oil, sugar and little minced garlic and keep aside.
4. Toss the mushrooms in the same pan sauté with oil and minced garlic, soy sauce. Keep aside.
5. Make the fried egg with sunny side up.

Plating

1. Spread the cooked rice on the plate or a large bowl as shown.
2. Then place the vegetables and mushrooms, separately, as shown.
3. Pour the prepared sauce on the top and shower little sesame oil.
4. Place the fried egg on top, sprinkle salt and pepper on it and then shower the dish with black and white sesame seeds.

Bibimbap is a Korean rice bowl which came from early rural Korean who used leftover vegetables and mixed with rice to make this dish. Bibim means mixing and bap means rice. Usually Koreans mix meat in this dish. Now, if you are into vegan food then just remove the egg from my recipe and it becomes super healthy and vegan.
