Recipes -

1. Aranchini Balls with Leftover Rice

Ingredients -
3-5 cheese cubes, cut up in smaller pieces
1 cup maida
2 cups besan
500ml almond milk
1/2 bread crumbs
Tomato ketchup to taste

Directions -
Take leftover rice, make a small ball in the palm of your hand.
Make a dent in the centre of the ball.
Put slices cheese cubes in the centre.
Roll it into a ball and make sure the cheese is covered.
Put maida, besan and almond milk in a bowl and whisk until there are no lumps.
Set aside.
Take half a cup of breadcrumbs, 1 pinch se salt, and tsp garlic powder - mix.
Roll the rice ball in the maida batter, then roll it into the breadcrumb mixture. Make sure the ball is completely coated.
Deep dry until golden brown.
Garnish with tomato sauce, cheese, or mint!

2. Roti Tacos

Ingredients -
1/4 cup red capsicum, diced
1/4 cup yellow capsicum, diced
1/4 cup green capsicum, diced
1/4 cup onion, diced
1/4 cup jalapeños
1/4 cup black olives
1 tsp black pepper powder
1 tsp salt
Chilli flakes, Italian herbs, tomato ketchup to taste

Directions -

Mix together all the capsicum, onion, jalapeños, olives, pepper, salt.
Take your leftover rotis, and dress each with Italian herbs, chilli flakes, tomato sauce.
Fold twice over and keep dressing each layer.
Hold it like a cone, and fill it with the vegetable mixture, then grated cheese.
Place on a hot pan or griddle, and cook on both sides until golden brown.
