Indonesian fried rice with stir-fried vegetables, fish, prawns & fried egg. You can use left over rice and mix with veggies & whatever meat or fish you have to create this marvellous dish)
Ingredients
• 2 cups long grain white rice
• ½ cup boneless chicken thighs, cut into ½ inch strips
• 6 to 8 raw shrimps, peeled and deveined
• 2 Tbs oil
• 1 onion finely chopped
• 2 tsp chopped ginger
• 1 Tbs dried shrimp paste (optional)
• 2 Tbs chopped garlic
• ½ tsp ground black pepper
• 2 tsp sesame oil
• 2 Tbs sambal oelek , one of the key ingredients in Indonesian cuisine, available in Asian grocery stores ( if unavailable use red chilli paste)
• I Tbs oyster sauce
• 1 Tbs ketjap mains( Indonesian sweet soy sauce) Alternative: Dark soy)
• Salt to taste
• 2 eggs beaten
• 3 Tbs chopped spring onions
• ½ chopped coriander leaves
Method
• Heat oil in a wok. Add onion, ginger, shrimp paste (if using), garlic and pepper and stir fry for 2 minutes. Add chicken and shrimp, sesame oil and stir fry for further 2 minutes.
• Add rice and continue to stir fry for 3 minutes and then mix the sambal oelek, oyster sauce, salt to taste and ketjap manis and stir fry for 2 minutes.
• Make fried egg and keep aside.
• Turn onto a big serving platter and garnish with spring onion, coriander leaves and fried egg.
Vegetarian Option:
(Use shredded vegetables like cabbage, beans and carrots in place of chicken, shrimp and egg)
