I know... Peanut brittle recipe in the microwave? There are certain instances where the microwave is the right tool for the job, and this candy recipe is one of them.
Just keep these tips in mind:
-Use a microwave safe bowl or measuring cup at least 4 cups in size. 6 cups would be ideal.
- 14 minutes is a guideline only, your microwave may be faster or slower.

Ingredients:
2 cups peanuts
• 1 1/2 cup sugar
• 1/2 cup corn syrup
• 1/2 cup water
• 1 tsp butter
• 1 tsp baking soda

Method:
In a large glass bowl or glass measuring cup mix peanuts, sugar, corn syrup and water.
• Microwave on high for 14 minutes.
This time may vary depending on the strength of your microwave.
• Remove from the microwave stir in the butter, then stir in the baking soda.
The mixture will bubble.
• Pour onto a greased cookie sheet and allow to cool for a few hours.
• Caution this recipe is really hot coming out of the microwave; no licking the spatula or bowl.
• Once the mixture has hardened break into smaller pieces.

You can try and keep this for a week or more in a sealed container... But it won't stay around for more than a day or two.
