Potoler dorma

Ingredients:
• 6-8 parval or potol
• 1 cup grated paneer
• 3-4 cashew nuts chopped
• 8-10 raisins
• 1 tsp green chillis chopped
• 1 tsp garam masala
• 1 tsp sugar
• 2 tbs Mustard oil
• Salt to taste

For the gravy
• 1 tbs cashew nuts
• 1 tomato
• 1 onion
• 1 /2 inch piece ginger
• 1 tsp Turmeric Powder
• 1 tsp red chilli powder
• 1 tsp cumin powder
• 1 tsp garam masala powder
• 1 tbs Ghee
• Salt to taste

Method:
1. Heat ghee in a pan, add jeera till it is aromatic. Add the paneer, cashew, raisins, sugar, garam masala and salt. Stir and cook till everything comes together. Keep aside and cool. This forms the stuffing for the parvals
2. Peel the parval. Slit the middle and core out seeds thereby making a hollow inside.
3. Microwave the hollowed parvals for 5 minutes. This will make the parwal soft and easy to stuff
4. Stuff each parwal with the prepared paneer stuffing and keep aside.
For making the gravy,
5. Make a paste with cashew nuts, tomatoes, onion, ginger and green chillies
6. Heat the remaining mustard oil and add the prepared paste.
7. Add the turmeric, chilli, cumin powder and keep sautéing till the gravy thickens.
8. Add the stuffed parvals in the gravy and simmer till the parvals are soft.
