An authentic dessert made using hung curd is simple and absolutely divine.

SHRIKHAND

Ingredients

1½ cups hung curd
¾ cup sugar
¼ tsp green cardamom powder
A pinch of nutmeg powder
A large pinch of saffron, soaked in 1 tbsp warm water + for garnish
2 tsps charoli + for garnish
6-8 almonds, blanched, peeled and slivered
Slivered almonds for garnish
Slivered pistachios for garnish

Method

1. Take hung curd in a large bowl, add sugar, mix and set aside for 10 minutes.
2. Add green cardamom powder and nutmeg powder and mix well. Strain this mixture using a strainer into another bowl.
3. Add saffron, charoli, and almonds and mix. Cover and keep the bowl in the refrigerator till the mixture is chilled completely.
4. Transfer the shrikhand into a serving bowl, drizzle soaked saffron, almonds, pistachios, and charoli.
5. Serve chilled.
