How to make spicy Eggplant Dip - Aubergine Curry | Quick, Tasty, Easy Eggplant Recipe | Eat East Indian

Eggplant is healthy, can be made in a way that is tasty, easy to make and is perfect with roti, parantha, poori or other kinds of breads. In the video, I show you an easy way to prepare farm fresh Eggplants. Eggplant dip also freezes well.

Recipe method and Ingredients:
2 eggplants
1 onion
2-4 tomatoes
1 tsp each cumin, mustard and nigella seeds
2 tbsp garlic
Salt, Turmeric and chilli powder
Cilantro or dried fenugreek leaves as garnish

We steam this eggplant after peeling and chopping them for about 10 mins. Blend them and fry them with spices and onion- tomato base. Serve with parantha.
