OMELETTE PAVIngredients8 eggs8 pavs, slit in half¼ tsp turmeric powder1 tsp red chilli powder4 green chillies, finely chopped8 tbsps finely chopped onion8 tbsps finely chopped tomatoes4 tbsps chopped fresh coriander leavesSalt to taste4 tsps oil4 tsps butter + for toastingTomato ketchup to serveMethod1. Break in the eggs in a large bowl. Add turmeric powder, red chilli powder, green chillies, onion, tomato, coriander leaves and salt and mix till well combined.2. To make one omelette, heat 1 tsp oil and 1 tsp butter in a non-stick pan. Add a portion of the eggs mixture. Cook for 2-3 minutes on low heat. Carefully slip and cook the other side for 1-2 minutes. Cut the omelette in half and take it off the heat.3. Heat some butter in the same non-stick pan. Place a pav and toast for a few seconds on both sides. Place an omelette half on one side of the pav and fold it in half. 4.
