How To Make Yakitori | Glen And Friends Cooking

Yakitori is a Japanese dish that's an afterwork favourite, washed down with a cold beer - once you've had this at home, you'll want to make the trek to Tokyo for the real thing.

Ingredients:
2 lbs boneless skinless chicken thighs, cubed.
2 Tbsp vegetable or peanut oil
Salt & Pepper.
Skewers

Tare / Sauce:
1/2 cup chicken stock
3 Tbsp soy sauce
3 Tbsp mirin
2 Tbsp lemon juice
1 Tbsp brown sugar

Method:
In a bowl combine chicken chunks, oil, salt and pepper.
Mix to combine.
Thread chicken on skewers, not to tightly you want even cooking.
In a medium saucepan, combine sauce ingredients and bring to a boil. Cook until reduced by half - stirring occasionally.
Grill skewers over direct high heat - lid closed as much as possible - turning when the first side is nicely charred and swapping positions as needed for even cooking.
Begin basting and turning the skewers until fully cooked.
