Learn how to prepare flavorful Zucchini chutney at home with few basic Indian spices. Great accompaniment to any Indian meal, this chutney is really easy to make.Ingredients:1 zucchini ( we are using yellow Zucchini)1 tsp salt1/2 tsp turmeric10-12 dried curry leaves1 dried red chilli2 tbsp honey1/4 cup tamarind juice1/4 tsp cumin and mustard seeds1 onion2 cloves of garlicsmall piece of ginger2 tbsp oil for cooking1. Chop up Zucchini, onion, ginger and garlic.2. Heat 2 tbsp oil.3. Add cumin, mustard, red chilli and curry leaves. Give them about 30 secs.4. Add onions, ginger and garlic. Stir in with the oil. Add salt and turmeric. 5. Saute for 3-4 mins and then add Zucchini.6. Mix well. cover and cook for 5-7 mins. Keep stirring in betwene to avoid zucchini from sticking to the pan and to ensure even cooking.7. Add tamarind juice and honey. Give a thorough mix. Turn off the heat and let the mixture cool down. 8. Put everything in the blender and make a smooth paste.Chutney is now ready to be served.
