POACHED EGGS

Ingredients

8 eggs
2 tsps vinegar
Salt to taste
Crushed black peppercorns to taste
Salad to taste
Chopped fresh chives for garnish
English muffin to serve
Salad to serve

Method

1. To make one portion, break egg in a small bowl.
2. Bring sufficient water to a gently simmer in a deep pan.
3. Add vinegar into the hot water and whisk to form a gentle whirlpool. Add the egg and cook for 2-3 minutes or till the white is set. Take it out and gently drain on an absorbent paper.
4. Sprinkle salt, crushed black peppercorns and chives. Serve hot with English muffins and salad.
