Jen attempts to recreate her bagel love affair from Montreal. Ingredients—For the dough:1 ½ cups warm water¼ cup honey3 tablespoons canola oil2 ½ teaspoons active dry yeast1 large egg4 1/2 cups bread flour1 teaspoon saltFor the rest:1 cup sesame seeds14 cups of water1/3 cup honeySteps—In a bowl, whisk warm water, honey, canola oil, yeast, and egg. Then stir in salt and flour in 3 parts, until a soft dough forms. Knead dough on a lightly floured surface for about 10 minutes, until smooth. Set aside on a floured surface, cover with a clean towel, and let rest for 10 minutes.Preheat oven to 425°F. Divide the dough into 3 equal pieces. Roll each piece into a long rope, then curve ends and roll to make a bagel shape. In a large pot, boil water and honey. Add the bagels and boil for about 3-5 minutes.
