Basmati rice½ cup Urad dal split and polished¼ cup Puffed rice (Poha)½ tsp. Fenugreek seeds (Soak with Urad dal; optional)Salt as required2 tbsp. GheeMethod:-- Wash Urad Dal 3-4 times thoroughly and soak in warm water for a minimum of 6-8 hours.- Wash the Rice 3-4 times thoroughly and soak in warm water for a minimum of 6-8 hours.- Grind the soaked dal to a smooth paste with ½ a cup water.- Grind the rice in the same jar to a coarse paste with ½ a cup water.- Add puffed rice to this and grind again.- Transfer the ground rice and ground dal to a bowl and add a cup full of water and mix well.- Cover and place in a warm place overnight or 6-8 hours.- Once fermented add salt to the batter.Idli Batter for Soft and Spongy Idli is ready!
