Ikameshi Recipe (Simmered Squids Stuffed with Sweet Rice) | Cooking with Dog

We are making small Ikameshi, simmered squids with sweet rice inside. The dish is famous for Ekiben, railway boxed meals, in Hokkaido prefecture. Ikameshi is delicious even when cold, and the cute round shape makes it more popular. When small squids are available, you should definitely try this recipe.

(4 people) Cook Time: 75 minutes
* Soaking sweet rice in water and letting ikameshi sit to cool are not included in cook time.

8 Squids (80~100g / 2.8~3.5 oz per piece)
180ml Mochigome - Sweet/Sticky Rice (6.1 fl oz)
100ml Sake (3.4 fl oz)
3 tbsp Sugar
3 tbsp Soy Sauce
700ml Water (2.96 cup)

* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
