INEGOL KOFTA RECIPE

In this episode, I'd like to share with you 'Inegl Kofta' recipe. Inegol is a district in Bursa Province-located northwestern of Turkey, and is known for its famous kofta. The only difficult part of this recipe is waiting, and it tastes so amazing. Also, there are two different ways of forming Inegl kofta, and I show them both.

INGREDIENTS
1/2 kg. (1 pound) lean ground meat
2 onions
1/2 tsp baking soda
Salt & pepper

DIRECTIONS
Transfer 1/2 tsp baking soda into a small bowl.
If you have a meat grinder, evenly sprinkle baking soda over the cubed meat, rub with your hands, then grind 2 times.
If using ground meat, spread the ground meat in a large container.
Evenly sift the baking soda on top.
Knead until well combined.
Wrap the mixture in cling film then refrigerate for 24 hours.
The following day, grate the onions and spread over the meat mixture.
Add 1/2 tsp or to taste salt and a good pinch of black pepper.
Knead until well combined, for about 5 minutes.
It might be a good idea, to cook a tiny kofta to adjust the seasoning.
To form the koftas, tear off walnut-size pieces of mixture, and roll into a ball.
Then roll it on a cutting board, to form a smooth cylinder shape.
Or form a round patty then flatten.
Flattened patties cook up the best!
Make sure to wash your hands each time you touch raw meat!
Repeat until all the mixture has been used, then refrigerate for at least 4 hours before cooking.
You can cook Inegl Kofta, in a lightly greased pan.
Or in a cast iron pan.
But also, everything tastes better cooked outdoors :)
Arrange cooked koftas in a plate, with some bean salad.
Garnish with fresh veggies and serve.
