3 Ingredient Hot Chocolate 'Nice' Cream

INGREDIENTS

2 medium bananas. sliced and frozen
cup low-fat milk
cup NESTL Hot Chocolate Flavoured Original
cup (80g) margarine
cup (56g) castor sugar
2 large eggs
1 cups (156g) cake flour
tsp baking powder
cup (25g) desiccated coconut, lightly toasted

METHOD

For the nice cream:

1. In a blender, add the frozen banana slices, milk and a cup of NESTL Hot Chocolate Flavoured Original powder. Blend until just combined and smooth before transferring the mixture to a 15x8x5cm mini loaf tin.

2. Freeze the mixture for about 4 hours or overnight for best results. *Chefs Tip: Make this for the perfect prep-ahead treat!

For the cookies:

3. Preheat the oven to 140C and line a baking tray with baking paper.

4. In a mixing bowl, whisk the margarine and sugar with and electric-beater until creamy. Add the eggs to the bowl and whisk until well combined. Sieve the remaining cup of hot chocolate powder, flour and baking powder in the bowl and gently fold until a soft cookie dough has formed.

5. Transfer the dough to a freezer-safe container and allow the dough to firm-up in the freezer for 1 hour.

6. Once the cookie dough has set, divide the dough into 60 small balls and place them, spaced out, on the prepared baking tray.

7. Use the back of a spoon to flatten the cookies before baking them for 10 minutes.

8. Once baked, transfer the cookies to a cooling rack to cool completely.

9. Assemble the hot chocolate nice cream sandwiches by adding a small scoop of frozen nice cream between two cookies. Gently roll the sides of the cookies through the coconut and freeze for 1 hour or until set.

10. Serve on a chilled platter, garnish with fresh berries and ENJOY!
