Instant Pot Meatballs and Pasta Sauce

Use any favorite recipe for meatloaf to make your meatballs. Here is how I did it: In my KitchenAid mixer, I combined 1 pound of ground turkey and 1 pound of mild Italian turkey sausage. To that I added about 1/4 cup milk, 1/2 cup grated Parmesan cheese, 3/4 cup of plain bread crumbs, 1 tablespoon Worcestershire sauce, 1/3 cup of bottled chili sauce, 2 eggs, 1/3 to 1/2 cup chopped fresh herbs (parsley, oregano, anything you like), 1/2 cup finely diced sweet onion, 3 very finely diced garlic cloves and 1 cup of finely chopped kale. Combine this in the mixer until well blended, then pat into about 30 meatballs and stack these onto a plate. Next, I put the KitchenAid away and got out my Instant Pot. With my liner pot in place, I set the pot to Saute and let it get hot before adding about 2 tablespoons olive oil. To the oil, I added 2 diced cloves of garlic and 1 medium chopped red bell pepper. Let that saute for about 3 minutes, then gently add the meatballs to the pot, stacking them in layers as needed. Then add 1 28-ounce can tomato puree and 1 28-ounce can crushed tomatoes, 1 cup of red wine, and a tablespoon or so of dried Italian seasoning. Stir very gently so you don't break up the meatballs. Put your lid on the pot with the sealing ring in place and set valve to "SEALING." Set to Manual/High pressure for 8 minutes. IMPORTANT TO NOTE: If your sauce does not come to pressure (if the valve at the top of your pot does not pop up after some steam has released) before your timer starts counting down, don't worry, just turn off the pot, remove the lid and add more wine or some water to thin out the sauce enough to create the steam needed to bring the sauce to pressure. Reseal the pot and set again to Manual/High for 8 minutes, making sure the pot comes to pressure before the timer starts counting down. While the sauce is cooking, cook some pasta on your stovetop according to package directions. When pressure cooking is done, allow sauce to release naturally for about five minutes, then manually release remaining pressure. Remove lid, gently stir the sauce and if it seems thin, hit the saute button and let sauce thicken up for a few minutes. Serve over pasta with freshly grated Parmesan cheese, with a nice salad with some crunchy breadsticks. ENJOY!
