A recipe unlike any other, this chunky jackfruit shawarma tastes delectable when serve with beetroot , vegan mayo and french fries.

JACKFRUIT SHAWARMA

Ingredients

2 tbsps + 4 tsps olive oil
1 medium onion, pureed
1 tbsp garlic paste
300 grams raw jackfruit, cut into ½ inch pieces, boiled and drained
Crushed black peppercorns to taste
Salt to taste
2 tsps paprika
1 tsp cumin powder
8 tbsps vegan mayonnaise + for drizzling + to serve
1 large carrot, cut into thin strips
1 small cabbage, cut into thin strips
1 cup pickled beetroot
French fries as required
Black olive slices as required

Method

1. Heat 1 tbsp oil in a non-stick pan, add onion puree and sauté well. Add garlic paste and mix well. Cook till the raw smell disappears.
2. Add jackfruit and sauté for 2-3 minutes. Add crushed black peppercorns, salt, paprika, cumin powder, and mix. Sauté for 2-3 minutes.
3. Add 1 tbsp oil and mix well. Cover and cook for 3-4 minutes. Mix well and cook without the cover for 1 minute, sautéing continuously. Take it off the heat.
4. For one serving, heat 1 tsp oil in a non-stick grill pan. Place the shawarma bread and grill till dark brown marks appear on both sides. Take it off the heat.
5. Place the bread on a worktop, add 2 tbsps vegan mayonnaise and spread it evenly. Place a portion of carrot strips, a portion of cabbage, and place a few pickled beetroot strips.
6. Place a portion of the prepared mixture and spread in the middle of the bread. Drizzle a little vegan mayo on top.
7. Place a few French fries on it, black olives and fold it in half.
8. Secure with a parchment paper and tie it with a thread. Serve immediately with vegan mayo and French fries.
