कटहल थोरन | Jackfruit Thoran | Sanjeev Kapoor Khazana

A popular side dish from Kerala, made using raw jackfruit, loaded with healthy fibres. Served hot garnished with coconut in authentic style. Make the most of jackfruit while it is in season.

JACKFRUIT THORAN

Ingredients

750 grams raw jackfruit, peeled, and cut into 2 inch pieces
1 cup scraped fresh coconut + for garnish
Salt to taste
½ tsp turmeric powder
2-3 green chillies, stemmed
1 tsp cumin seeds
2 tbsps coconut oil
1 tsp mustard seeds
1 tbsp split skinless black gram (duli urad dal)
10-12 garlic cloves, vertically sliced
1 cup sliced madras onions
2-4 dried red chillies
15-20 curry leaves
¼ tsp crushed black peppercorns

Method

1. Put the raw jackfruit pieces in a pressure cooker. Add 3 cups water, salt and turmeric powder.
2. Cover and cook for 3-4 whistles.
3. Put the green chillies, cumin seeds, and coconut in a mixer jar and grind to a coarse mixture.
4. Open the cooker once the pressure has reduced completely. Drain the mixture and transfer the cooked raw jackfruit into another bowl and lightly mash.
5. Heat coconut oil in an earthen pot. Add mustard seeds and let them splutter. Add split skinless black gram and garlic and mix well. Cook for 1-2 minutes.
6. Add madras onion and mix. Add dried red chillies and curry leaves and mix well. Cook till the onions turn translucent.
7. Add the mashed jackfruit and mix till well combined. Add the ground mixture and mix well. Cook for 2-3 minutes.
8. Adjust salt and add crushed black peppercorn and mix well. Switch the heat off and serve hot garnished with coconut.
